Research Communications Specialist
Erin is a Research Communications Specialist with the Global Food Research Program. She obtained her bachelors in global business and marketing from UNC Asheville and her master’s degree in public health from UNC-Chapel Hill’s Gillings School of Global Public Health. Her interests include health equity, global health policy, and environmental health.
The first thing I learned to cook was… focaccia!
My favorite food for summer is… fresh tomatoes or corn.
My go-to comfort food is… warm polenta with tomato sauce and lots of parmesan cheese!
My family’s holiday favorite… is pavlova — a big bed of crispy, chewy meringue topped with whipped cream and various fruits! I try to switch it up each year.
