Emile Charles
Undergraduate Research Assistant
Emile Charles is an undergraduate student at UNC-Chapel Hill majoring in nutrition (science and research) with minors in chemistry and French. He is passionate about global health and food equity, community partnerships to help combat health disparities, and international research collaborations which connect public health and clinical interventions. His previous community-based and clinical experiences in South Africa, Malawi, Senegal, and North Carolina have piqued his interest in ongoing global public health work and how to implement community nutritional interventions most effectively. He is currently working with the Global Food Research Program on a project examining the cost of adhering to a DASH diet in diverse populations in South Africa. In his free time, he loves to travel; spend time in, on, and near water; and cook (then enjoy) delicious foods!
My favorite summer/winter food are… grilled corn salad/sweet potato curry!
Foods I must have in my home are… plantains, cinnamon raisin bagels, dairy-free ice cream, Trader Joe’s pumpkin cereal bars, ginger beer, and lemonade!
