Carlos Roberto Soto Díaz
Doctoral Student
Carlos is a doctoral student in the Department of Nutrition at UNC-Chapel Hill. He holds a Masters of Public Health in Applied Epidemiology from the UNC’s Gillings School of Global Public Health as well as a bachelor’s degree in nutrition sciences from North Carolina State University. He is interested in policies that promote healthy diets and address health disparities. He is currently working with the Global Food Research Program studying perceptions about pandemic-related changes to WIC among Spanish-speaking, Hispanic WIC participants in North Carolina.
My favorite food is… Mofongo, a Puerto Rican dish made with fried green plantains mashed with garlic and olive oil.
My favorite drink is… coffee.
My family’s holiday favorite is… Tembleque, a Puerto Rican coconut pudding.
