Tiffany Mo. Williams
FERN Fellow, 2022
Tiffany Mo. Williams joined the Global Food Research program for the inaugural 2022 FERN summer fellowship between her junior and senior years at NC State University, where she is studying nutrition sciences and Spanish. While here, Tiffany conducted a literature review exploring innovative ways to increase fruit and vegetable consumption among school children. She has experience in food and nutrition services, including culinary arts, and is interested in the globalization of food and the food supply chain on an international scale. She is also interested in food-related illnesses, specifically obesity, diabetes, and high blood pressure, and how school breakfast and lunch programs affect dietary eating habits in adulthood.
When I’m in a time crunch, I love to make… a granola bowl with bananas, mangoes, blueberries, peanut butter, and agave nectar.
Foods I must have in my home are… plant-based milk, avocados, bananas, mangoes, old-fashioned oats, peanut butter, sourdough bread.
I can’t eat/cook ______ without making a mess: Marinara sauce and spaghetti
My most interesting food habit is… storing snacks in different bags or coats in case I get hungry somewhere.
