Claire Leadbetter
Graduate research assistant
Claire graduated from UNC-Chapel Hill with a bachelor’s degree in biology and has returned to pursue her master’s degree in public health in nutrition & dietetics. Between her undergraduate and graduate studies, Claire worked in market research and sales operations for a contract research organization. She is particularly interested in nutrition education, prevention of chronic disease through nutrition, and the impact of maternal nutrition on infants and children.
Foods I must have in my home are… Greek yogurt, frozen berries, and cheddar rockets (from Trader Joe’s).
My favorite food for winter is… soup. I love all kinds and love that it can be frozen and reheated easily.
The first thing I learned to cook was… peanut butter cookies.
